Update:
I finally had a chance to check things out.
So I first started by connecting the fake-a-lake up to the boat, and started the engine with the garden hose running first. After about 20 seconds, I noticed that the exhaust manifolds were starting to get hot, and no water was exiting the exhaust. So I disconnected the hose just before the transmission cooler that is on the outlet of the impeller, it was dry. I then turned the water back on to see if I could see any obvious water leaks between the water pickup on the bottom of the hull to the impeller. Not a single drop anywhere. I then popped off the drain plug on the v-drive, and saw fresh water flowing out when the garden hose was on. I then removed the impeller housing cover, which was dry. I checked to make sure the impeller was turning with a quick blip of the starter (without starting the engine), and it did spin. I then checked the hose inlet to impeller, it was dry. With that hose disconnected, I turned the garden hose on, and fresh water started to come out. So I pulled the impeller to fully inspect it. I compared it up against my old impeller and a new replacement one I bought. Everything looked the same and in good condition except on the face of the impeller. The non-working impeller has two half circle notches on both faces of the impeller while the others are completely smooth. I replaced it with a new impeller, and it worked perfect. All weekend it ran great, started circulating water right away through the exhaust, engine temps were stable while running, coming off plane and idling.

I'm not exactly sure if it's because of the notches on the impeller, or if it was just a bad impeller, or I accidentally primed it with the garden hose, but it seems to be working again like normal.

I've seen the fins of the impeller separate from the brass center ring. Impeller will look fine but won't spin under pressure. It may "shake" when you tap the ignition but won't when running full speed. Damn things can ruin a day or weekend fast

Weren't your alarms screaming before you got anywhere near 210? Seems like when I clogged up my filter with debris that it was yelling at me in the 170s.

Yeah, I was wondering the same. I figured it would trip sooner but it took it all way to 212F for the engine temp alarm to trip. I'm not sure why it did that.
