Took boat out to water test it for the new season. Took on water all around drivers seat and floor was burning to touch. I was told it was heater core.

So my uneducated question, what does the heater core do actually?

the heater core is what turns the hot water into heated air out of the vents same as any vehicle hot water enters the core at full operating temp then the fan blows the heat from it down the vents, it might just be a loose hose clamp or possibly the core itself remove the front access cover in front of the seat and check it out

The heater core is a radiator with a fan. It is easy to replace. If your boat isn't under warranty then just buy a replacement for $100. I forgot the name of the manufacturer at the moment but it should be easy to find. If you don't blow out the hose that leads to the heater core over winter, it will freeze.

More then likely it's Heater craft. But you should have a shut off valve. So the water isn't going to the heater.

There may be a shutoff valve on the newer boats but there isn't one on mine. He can by-pass it with two hose clamps and 3/4" insert that fits inside the rubber hose. Just connect the inlet hose to the outlet hose and it is by-passed till the replacement core can be installed.
