I just got boat back from it's first service and on way back to the dock cruising full out for a few minutes I get a SERVICE ENGINE message and rpm's drop down. I noticed coolant was at 190 degrees. My thoughts are the coolant is low, I will check in am when it is cool and fill if needed. Any other ideas? No fault codes were thrown on the gauge screen when I checked that.
Would low coolant cause this to happen with no fault codes?
Please advise, I have people coming from out of town on Sunday to use the boat and now this... bummer.

You need to be quick to get the fault code. Do you have a freshwater cooled motor with a closed cooling system? With a brand new boat why would the coolant be low? I think its much more likely that you have a plugged cooling system but most of us are raw water cooled so you may not get a ton of response here.

I topped the coolant off this morning and it didn't really take much at all so that might not be the issue. However both times yesterday when I was having the issues it was while running full out which I hardly ever do. about 5500rpm's. I did notice in the manual it mentioned max range should be about 5200 I think... Not sure if that was the issue. (it's a Monsoon 350) I took it out this morning and simulated surfing for a while with no issues. So I guess I will be good to go tomorrow and keep a close eye on things. Jason

Some 2015 350 owners needed to update their ECM's due to exhaust temps being set incorrectly.

Need to have the software flashed. Our dealer has had to do this to every 350 monsoon they have received this year. Something to do with exhaust temps reading incorrectly.
