I know your concern with the 750s not filling, but look to the sumo 600's. I did a side by side and the 600's fill to capacity and hold the same as the 750's do in that locker. the only thing to be careful of is to make sure your sumo's are the newest ones with the better fittings that do not pop out. My bow sack is a sumo and have had no issues, but there are a handful of guys who have had some issues with them. The fly highs have no real problems with their fittings, but their bags are not as good for a few reasons. 2 important ones are the capacities are overstated and second, their 1" fittings are not true ID 1", the sumo's are and will fill and drain a lot faster. for the record I have flyhigh 750's.
I think your starting weight set up with the lead in the lockers and 400's and the lead in the bow is a great starting point. adding a couple sacks to the floor will make your wake amazing. WARNING, once you ride it with 4000+ lbs properly set up, you will never want to ride it any other way.
