So when the rudder is straight, my steering wheel is approx. a half turn off. Its just one of those small things that bothers you, but I'd like to fix it.
Anyone have anything similar that they've run into? I'm guessing I can simply take the wheel off and remount it centered?

It is not corrected by removing the wheel..you need to disconnect the gear assembly under the dash and straighten the rudder then reattach.
Pretty simple fix once you look at the steering assembly under the dash and understand it. There is a long (about 12" x 1") enclosed track gear under the dash that bolts to steering wheel shaft gear, which drives the rudder by cable.
Undo the 4 bolts holding it to the gear box at the end of steering shaft, then go to the back of the boat and straighten the rudder and reattach the box back to the steering shaft (make sure wheel is straight and the shaft is centered).
