Not sure which options cannot be added later but I would check to see which options will cost WAY more if added later. For example. I bet adding the ballast plug and play after would be a pain and cost more if a dealer did it.
Figure man hours at a shop rate for each option you choose not to add now.

Any of the tower / carpet / cover options you could add later. Anything related to wiring / plumbing (like the plug-n-play kit) would be best to get now. I would think it would be more expensive to have someone do it later.
From SeaDek you can get the swim platform pad, but I'm not sure about the rest of the pads. Were there any specific options you were thinking about getting later?

most of the options are bolt on but what was wondering was about the plug n play and the wedge and the drivers seat options like flip up bolster and swivel as well as the chill ax seat in the walk through. the other thing I was wanting to know was about wiring for the stereo one dealer told me it came with the wires run I just needed to buy the components.
